Aspen, Colorado has wholeheartedly embraced Meatless Mondays, an initiative aimed at improving personal and environmental health by reducing meat consumption. Local restaurants now offer expanded vegetable options on the first day of the work week.
Given Aspen’s active, outdoorsy vibe, it’s perhaps no surprise that the hospital and public school system presciently implemented pro-veggie choices a couple years ago. Still, Aspen is not a vegetarian paradise. Elk, bison, and lamb are still menu favorites and a local vegetarian restaurant closed a while back.
