Actually yes, at the University of North Texas, to be specific. Whereas most college and university dining facilities offer vegetarian and vegan offerings at all times, UNT has opted to dedicate a space exclusively to vegan fare.
We’re curious to see how this development plays out in the long run. Is there enough demand for vegan food at UNT to sustain a separate dining hall? Maybe it’ll be a case of “if you build it, they will come,” with this institutional commitment to a vegan lifestyle causing an upswing in the number of vegans attending UNT. (Seems far-fetched, but not completely so.)
